Description

A hearty and comforting dish that combines roasted butternut squash with ground turkey, perfect for chilly autumn evenings.

Ingredients

Scale
  • 1 medium butternut squash, peeled and diced
  • 1 pound ground turkey
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the diced butternut squash with olive oil, garlic powder, onion powder, salt, and pepper until evenly coated.
  3. Spread the seasoned squash on a baking sheet in a single layer.
  4. Roast in the preheated oven for 25-30 minutes, or until the squash is tender and slightly caramelized.
  5. While the squash is roasting, cook the ground turkey in a skillet over medium heat until browned and cooked through. Season with salt and pepper to taste.
  6. Once the squash is roasted, combine it with the cooked turkey in a serving dish.
  7. Optionally, garnish with fresh herbs and serve warm.

Notes

For a twist, substitute ground turkey with ground chicken or beef. Try adding fresh herbs like thyme and sage for added flavor.
