Ingredients

- 1 pound ground beef
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes
- 1 packet taco seasoning
- 4 cups beef broth
- 1 onion, chopped
- 1 bell pepper, chopped
- Salt and pepper to taste
- Shredded cheese, for serving
- Sour cream, for serving
- Tortilla strips, for serving
Instructions
- In a large pot, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
- Add the chopped onion and bell pepper; cook until softened, about 3 to 5 minutes.
- Stir in the taco seasoning, black beans, corn, diced tomatoes, and beef broth, mixing well to combine.
- Bring to a boil, then reduce the heat and let it simmer for 20 minutes.
- For a slow cooker, combine all ingredients and set to low for 6-8 hours.
- Season with salt and pepper to taste before serving.
- Serve hot and top with shredded cheese, a dollop of sour cream, and crispy tortilla strips.
