Description

A comforting and flavorful ground beef taco soup that’s perfect for busy weeknights and casual get-togethers.


Ingredients

Scale
  • 1 pound ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 4 cups beef broth
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • Salt and pepper to taste
  • Shredded cheese, for serving
  • Sour cream, for serving
  • Tortilla strips, for serving

Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
  2. Add the chopped onion and bell pepper; cook until softened, about 3 to 5 minutes.
  3. Stir in the taco seasoning, black beans, corn, diced tomatoes, and beef broth, mixing well to combine.
  4. Bring to a boil, then reduce the heat and let it simmer for 20 minutes.
  5. For a slow cooker, combine all ingredients and set to low for 6-8 hours.
  6. Season with salt and pepper to taste before serving.
  7. Serve hot and top with shredded cheese, a dollop of sour cream, and crispy tortilla strips.
