Instructions

  1. Place the chicken breasts in your slow cooker.
  2. Add the rice, chicken broth, lemon juice, olive oil, oregano, thyme, salt, and pepper.
  3. Stir to combine, ensuring the rice is fully submerged in the liquid.
  4. Cover the slow cooker and cook on low for 4 to 6 hours, or until the chicken is cooked through and the rice is tender.
  5. Once cooked, use two forks to shred the chicken right in the slow cooker and stir everything to mix in the flavors.
