- 1 lb ground beef or turkey
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, and sliced green onions
Instructions
- Brown the meat and onions in a skillet over medium heat until the meat is no longer pink. Add garlic in the last minute.
- Transfer the meat mixture to a crockpot, scraping all bits from the skillet.
- Add kidney beans, black beans, diced tomatoes, and tomato sauce to the crockpot.
- Sprinkle in chili powder, cumin, paprika, and salt and pepper. Stir thoroughly to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, stirring occasionally if possible.
- Near the end of cooking, taste and adjust seasonings as necessary.
- Ladle into bowls and garnish with toppings as desired.
