Quick and easy cottage cheese egg bites that are high in protein and perfect for meal prep, school lunches, or a protein-rich snack.
Ingredients

- 1 cup cottage cheese
- 6 large eggs
- 1/2 cup cooked bacon, chopped
- Salt and pepper to taste
- Optional: chopped fresh herbs (chives, parsley)
- Optional: 1/4 cup shredded cheese (cheddar, Swiss, or pepper jack)
Instructions
- Preheat your oven to 350°F (175°C) and grease a standard 12-cup muffin tin.
- In a bowl, whisk eggs and combine with cottage cheese.
- Fold in chopped bacon and season with salt and pepper.
- Spoon the mixture into muffin cups, filling each about 3/4 full.
- Bake for 20–25 minutes until the tops are set and lightly golden.
- Cool slightly before removing from the tin.
Notes
Perfect for meal prep, these bites also freeze well. Use a silicone muffin tin for easy release.
