- 1 cup cottage cheese
- 4 large eggs
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped spinach (optional)
- 1/4 cup diced bell peppers (optional)
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Whisk together the cottage cheese and eggs until well combined.
- Stir in the cheddar cheese, spinach, bell peppers, salt, and pepper.
- Grease a muffin tin or line it with silicone muffin cups.
- Pour the mixture evenly into the muffin tin, filling each cup about 3/4 full.
- Bake for 20-25 minutes or until the egg bites are set and slightly golden on top.
- Let cool for a few minutes before removing from the tin.
Notes
These egg bites can be enjoyed warm or cold and are perfect for meal prep. Store leftovers in an airtight container for 4-5 days or freeze for up to a month.
