Description

Delicious and nutritious egg bites made with cottage cheese, perfect for a quick breakfast or snack.


Ingredients

  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped spinach (optional)
  • 1/4 cup diced bell peppers (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the cottage cheese and eggs until well combined.
  3. Stir in the cheddar cheese, spinach, bell peppers, salt, and pepper.
  4. Grease a muffin tin or line it with silicone muffin cups.
  5. Pour the mixture evenly into the muffin tin, filling each cup about 3/4 full.
  6. Bake for 20-25 minutes or until the egg bites are set and slightly golden on top.
  7. Let cool for a few minutes before removing from the tin.

Notes
