- 4 cups potatoes, diced
- 1 onion, chopped
- 3 cups beef broth
- 1 cup heavy cream

Instructions
- In a large pot, brown the ground beef over medium heat. Drain excess fat.
- Add chopped onion and diced potatoes to the pot, and stir for about 5 minutes.
- Pour in the beef broth, bring to a boil, then reduce heat and let simmer until potatoes are tender, about 15-20 minutes.
- Stir in the heavy cream and shredded cheddar cheese, allowing the cheese to melt.
- Season with salt and pepper to taste.
- Serve hot, garnished with green onions if desired.
