Description

This comforting soup combines ground beef, creamy cheese, and tender potatoes, perfect for chilly nights.


Ingredients

  • 4 cups potatoes, diced
  • 1 onion, chopped
  • 3 cups beef broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • Optional: chopped green onions for garnish

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add chopped onion and diced potatoes to the pot, and stir for about 5 minutes.
  3. Pour in the beef broth, bring to a boil, then reduce heat and let simmer until potatoes are tender, about 15-20 minutes.
  4. Stir in the heavy cream and shredded cheddar cheese, allowing the cheese to melt.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with green onions if desired.

Notes
