Description

A refreshing dish featuring crisp cucumbers mixed with savory, tangy, and slightly sweet flavors. Perfect for picnics, barbecues, or as a light side.


Ingredients

Scale
  • 5 Persian cucumbers
  • 1/2 tsp salt
  • 1/2 tbsp sesame oil
  • 3/4 tbsp light soy sauce
  • 1/21 tbsp sugar (adjust to taste)
  • 3/4 tbsp rice vinegar
  • 1 tbsp chili oil
  • 1/2 tbsp sesame seeds
  • 1/2 tbsp minced garlic (optional)

Instructions

  1. Rinse and slice one end of the cucumber at an angle.
  2. Continue slicing at the same angle until the entire cucumber is sliced into oval pieces.
  3. Place slices in a bowl, sprinkle with 1/2 tsp salt, and mix well. Refrigerate for at least 20 minutes.
  4. Drain the water, rinse the cucumbers briefly, and return them to the bowl.
  5. Add sesame oil, light soy sauce, sugar, rice vinegar, chili oil, sesame seeds, and garlic.
  6. Stir until well combined and serve immediately.

Notes

For extra crunch, use a mandoline slicer. If short on time, skip the salting process but it improves texture and flavor.
