Description

A quick and hearty taco soup made with seven canned ingredients, perfect for busy weeknights and family gatherings.


Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 1 can small diced green chilies
  • 1 lb ground beef or turkey (optional)
  • 1 packet taco seasoning
  • Salt and pepper to taste
  • Diced avocado, shredded cheese, and sour cream for garnish (optional)

Instructions

  1. In a large pot, brown the ground beef or turkey over medium heat until fully cooked. Drain any excess fat.
  2. Add in the black beans, kidney beans, corn, diced tomatoes (including green chilies), tomato sauce, and taco seasoning.
  3. Stir everything together and bring it to a gentle simmer.
  4. Let the mixture cook for about 20-30 minutes, stirring occasionally, until well combined and heated through.
  5. Taste your soup and season with salt and pepper as needed.
  6. Serve hot, adding diced avocado, shredded cheese, and sour cream on top if desired.
