- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 can diced tomatoes
- 1 can tomato sauce
- 1 can small diced green chilies
- 1 lb ground beef or turkey (optional)
- 1 packet taco seasoning
- Salt and pepper to taste
- Diced avocado, shredded cheese, and sour cream for garnish (optional)
Instructions
- In a large pot, brown the ground beef or turkey over medium heat until fully cooked. Drain any excess fat.
- Add in the black beans, kidney beans, corn, diced tomatoes (including green chilies), tomato sauce, and taco seasoning.
- Stir everything together and bring it to a gentle simmer.
- Let the mixture cook for about 20-30 minutes, stirring occasionally, until well combined and heated through.
- Taste your soup and season with salt and pepper as needed.
- Serve hot, adding diced avocado, shredded cheese, and sour cream on top if desired.
Notes
