Description

A quick and hearty taco soup made with seven canned ingredients, perfect for busy weeknights.


Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 1 packet taco seasoning
  • 1 cup water
  • Optional toppings: shredded cheese, sour cream, diced avocado, fresh cilantro

Instructions

  1. In your crockpot, combine all the canned ingredients: black beans, kidney beans, corn, diced tomatoes with green chilies, diced tomatoes, and tomato sauce.
  2. Stir in the taco seasoning along with the water to mix everything well.
  3. Cover the crockpot and cook on low for 360-480 minutes or on high for 180-240 minutes.
  4. When ready, serve hot and let everyone add their favorite toppings.
