Description

A one-pot meal featuring fluffy rice and savory chicken, topped with refreshing tzatziki sauce. Perfect for busy weeknights.


Ingredients

  • 2 cups Long Grain White Rice
  • 4 cups Chicken Broth
  • 2 Boneless, Skinless Chicken Breasts
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 cup Greek Yogurt
  • 2 cloves Minced Garlic
  • 1 cup Grated Cucumber
  • 2 tablespoons Dill
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Oregano
  • 1 teaspoon Paprika
  • 1 cup Cucumber Substitute (diced zucchini or bell pepper)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large baking dish, combine the rice and chicken broth, stirring to mix.
  3. Lay the chicken breasts on top, and drizzle with olive oil. Season generously with salt, pepper, and paprika.
  4. Cover the dish tightly with aluminum foil and bake for 35-40 minutes, or until the chicken is fully cooked and the rice is tender.
  5. While the chicken and rice bake, prepare the tzatziki sauce. In a bowl, mix the Greek yogurt, minced garlic, grated cucumber, dill, lemon juice, oregano, and a pinch of salt.
  6. Once the dish is done, remove it from the oven and let it rest for a few minutes. Fluff the rice with a fork, then serve the chicken on top with a generous dollop of tzatziki.

Notes

This dish can be stored in an airtight container in the fridge for up to 3 days. Tzatziki can be made ahead of time for improved flavor.
