- 2 cups Long Grain White Rice
- 4 cups Chicken Broth
- 2 Boneless, Skinless Chicken Breasts
- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 cup Greek Yogurt
- 2 cloves Minced Garlic
- 1 cup Grated Cucumber
- 2 tablespoons Dill
- 2 tablespoons Lemon Juice
- 1 teaspoon Oregano
- 1 teaspoon Paprika
- 1 cup Cucumber Substitute (diced zucchini or bell pepper)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large baking dish, combine the rice and chicken broth, stirring to mix.
- Lay the chicken breasts on top, and drizzle with olive oil. Season generously with salt, pepper, and paprika.
- Cover the dish tightly with aluminum foil and bake for 35-40 minutes, or until the chicken is fully cooked and the rice is tender.
- While the chicken and rice bake, prepare the tzatziki sauce. In a bowl, mix the Greek yogurt, minced garlic, grated cucumber, dill, lemon juice, oregano, and a pinch of salt.
- Once the dish is done, remove it from the oven and let it rest for a few minutes. Fluff the rice with a fork, then serve the chicken on top with a generous dollop of tzatziki.
Notes
This dish can be stored in an airtight container in the fridge for up to 3 days. Tzatziki can be made ahead of time for improved flavor.
