- 4 boneless skinless chicken breasts
- Salt and pepper, to taste
- 1 cup chicken broth
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1 tsp dried oregano
- ½ tsp dried thyme
- ¼ tsp red pepper flakes (optional)
- ½ cup sun-dried tomatoes
- 2 tbsp butter
- Fresh basil or parsley, chopped (for garnish)
Instructions
- Pat the chicken dry. Season both sides with salt and pepper generously.
- Combine the chicken broth, heavy cream, grated Parmesan cheese, minced garlic, dried oregano, dried thyme, and red pepper flakes (if using) in a bowl. Whisk until smooth.
- Arrange the seasoned chicken breasts in the bottom of your slow cooker.
- Pour the creamy mixture evenly over the chicken.
- Scatter the sun-dried tomatoes on top.
- Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours until the chicken is fully cooked and tender.
- Stir in the butter about 30 minutes before serving.
- Sprinkle chopped fresh basil or parsley on top for freshness before serving warm.
Notes
For a lighter version, substitute half-and-half for heavy cream. This dish can also be frozen for up to 3 months.
