Description

A comforting and flavorful tomato soup that’s simple to prepare and perfect for any occasion.


Ingredients

Scale
  • Fresh tomatoes (or canned for convenience)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 2 tablespoons olive oil
  • Herbs and spices (basil, oregano, salt, and pepper)
  • Optional: cream for richness or a splash of balsamic vinegar for acidity

Instructions

  1. In a large pot, heat two tablespoons of olive oil over medium heat.
  2. Add diced onion and garlic, cooking until softened and fragrant, about 5 minutes.
  3. Stir in your chopped fresh tomatoes (or canned), along with the broth. Bring to a boil.
  4. Add in your herbs, salt, and pepper. Let the soup simmer for about 15 minutes.
  5. Carefully blend the soup until smooth using an immersion blender.
  6. If desired, stir in a dash of cream or balsamic vinegar and cook for another 2 minutes.

Notes

For a chunkier soup, reserve some chopped tomatoes to add back after blending. Fresh herbs can greatly enhance the flavor.
