Ingredients

- Fresh tomatoes (or canned for convenience)
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 2 tablespoons olive oil
- Herbs and spices (basil, oregano, salt, and pepper)
- Optional: cream for richness or a splash of balsamic vinegar for acidity
Instructions
- In a large pot, heat two tablespoons of olive oil over medium heat.
- Add diced onion and garlic, cooking until softened and fragrant, about 5 minutes.
- Stir in your chopped fresh tomatoes (or canned), along with the broth. Bring to a boil.
- Add in your herbs, salt, and pepper. Let the soup simmer for about 15 minutes.
- Carefully blend the soup until smooth using an immersion blender.
- If desired, stir in a dash of cream or balsamic vinegar and cook for another 2 minutes.
Notes
For a chunkier soup, reserve some chopped tomatoes to add back after blending. Fresh herbs can greatly enhance the flavor.
