Description

A hearty and flavorful taco soup with ranch seasoning, perfect for chilly evenings and busy weeknights.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 packet ranch seasoning
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can pinto beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can diced tomatoes
  • 4 cups beef or chicken broth
  • Shredded cheddar cheese, for serving
  • Sour cream, for serving
  • Tortilla chips, for serving

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat for about 5-7 minutes, breaking it apart as it cooks. Drain any excess fat.
  2. Stir in the taco seasoning and ranch seasoning, then add black beans, pinto beans, corn, diced tomatoes, and broth.
  3. Bring the mixture to a gentle simmer and let it cook for 10-15 minutes, stirring occasionally until heated through and slightly thickened.
  4. Ladle the soup into bowls and top with shredded cheddar cheese, sour cream, and crunchy tortilla chips.

Notes

For a lighter version, substitute ground beef with turkey and use low-sodium broth. Customize toppings to your preference.
