- 1 lb ground beef
- 1 packet taco seasoning
- 1 packet ranch seasoning
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can pinto beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (15 oz) can diced tomatoes
- 4 cups beef or chicken broth
- Shredded cheddar cheese, for serving
- Sour cream, for serving
- Tortilla chips, for serving
Instructions
- In a large pot or Dutch oven, brown the ground beef over medium-high heat for about 5-7 minutes, breaking it apart as it cooks. Drain any excess fat.
- Stir in the taco seasoning and ranch seasoning, then add black beans, pinto beans, corn, diced tomatoes, and broth.
- Bring the mixture to a gentle simmer and let it cook for 10-15 minutes, stirring occasionally until heated through and slightly thickened.
- Ladle the soup into bowls and top with shredded cheddar cheese, sour cream, and crunchy tortilla chips.
Notes
For a lighter version, substitute ground beef with turkey and use low-sodium broth. Customize toppings to your preference.
