Description

A comforting and hearty taco soup made effortlessly in a crockpot, perfect for busy weeknights or gatherings.


Ingredients

Scale
  • 1 pound ground beef
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup beef broth
  • 1 cup shredded cheese
  • Salt and pepper to taste

Instructions

  1. In your crockpot, add the ground beef (cooked and drained).
  2. Next, toss in the black beans, kidney beans, corn, diced tomatoes, taco seasoning, and beef broth. Give it all a good stir to combine.
  3. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours.
  4. Just before you’re ready to serve, sprinkle the shredded cheese on top and allow it to melt.
  5. Serve hot and enjoy!

Notes

Feel free to swap out the ground beef for turkey or chicken. Add extra veggies for more nutrition.
