A comforting and hearty taco soup made effortlessly in a crockpot, perfect for busy weeknights or gatherings.
Ingredients

- 1 pound ground beef
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 cup beef broth
- 1 cup shredded cheese
- Salt and pepper to taste
Instructions
- In your crockpot, add the ground beef (cooked and drained).
- Next, toss in the black beans, kidney beans, corn, diced tomatoes, taco seasoning, and beef broth. Give it all a good stir to combine.
- Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours.
- Just before you’re ready to serve, sprinkle the shredded cheese on top and allow it to melt.
- Serve hot and enjoy!
Notes
Feel free to swap out the ground beef for turkey or chicken. Add extra veggies for more nutrition.
