Ingredients

- 3 to 4 pounds beef roast
- 4 medium potatoes, chopped
- 4 carrots, sliced
- 1 onion, chopped
- 2 cups beef broth
- 2 cloves garlic, minced
- 2 tablespoons Worcestershire sauce
- Salt and pepper to taste
- Fresh herbs (like thyme or rosemary), optional
Instructions
- Place the chopped potatoes, carrots, and onions at the bottom of the crockpot.
- Season the beef roast generously with salt and pepper, then place it on top of the vegetables.
- In a separate bowl, mix together the beef broth, minced garlic, and Worcestershire sauce. Pour this mixture over the roast.
- Add fresh herbs if desired.
- Cover the crockpot and set to cook on low for 8-10 hours, until beef is tender.
- Once done, serve hot and enjoy.
Notes
Searing the beef before cooking can add extra flavor. To thicken the gravy, remove the liquid and thicken it on the stovetop.
