Description

A comforting and hearty one-pot meal of tender beef roast, potatoes, and carrots, slow-cooked to perfection.


Ingredients

  • 3 to 4 pounds beef roast
  • 4 medium potatoes, chopped
  • 4 carrots, sliced
  • 1 onion, chopped
  • 2 cups beef broth
  • 2 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • Salt and pepper to taste
  • Fresh herbs (like thyme or rosemary), optional

Instructions

  1. Place the chopped potatoes, carrots, and onions at the bottom of the crockpot.
  2. Season the beef roast generously with salt and pepper, then place it on top of the vegetables.
  3. In a separate bowl, mix together the beef broth, minced garlic, and Worcestershire sauce. Pour this mixture over the roast.
  4. Add fresh herbs if desired.
  5. Cover the crockpot and set to cook on low for 8-10 hours, until beef is tender.
  6. Once done, serve hot and enjoy.

Notes

Searing the beef before cooking can add extra flavor. To thicken the gravy, remove the liquid and thicken it on the stovetop.
