Description

A warm and comforting crockpot potato soup that is thick, creamy, and packed with flavors, perfect for chilly evenings.


Ingredients

Scale
  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cups chicken or vegetable broth
  • 1 cup heavy cream or milk
  • 1 cup shredded cheddar cheese
  • 4 slices of bacon, cooked and crumbled (optional)
  • Salt and pepper to taste
  • Chives or green onions for garnish

Instructions

  1. In a slow cooker, combine the diced potatoes, chopped onion, and broth.
  2. Cook on low for 360-480 minutes or high for 180-240 minutes, until the potatoes are tender.
  3. Mash some of the potatoes in the soup for a creamy texture.
  4. Stir in the heavy cream or milk and shredded cheese, and mix until cheese is melted.
  5. Season with salt and pepper to taste.
  6. Top with bacon and garnish with chives or green onions before serving.

Notes

For chunkier texture, do not mash all the potatoes. Use Yukon gold potatoes for a buttery flavor.
