- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 3 cups chicken or vegetable broth
- 1 cup heavy cream or milk
- 1 cup shredded cheddar cheese
- 4 slices of bacon, cooked and crumbled (optional)
- Salt and pepper to taste
- Chives or green onions for garnish
Instructions
- In a slow cooker, combine the diced potatoes, chopped onion, and broth.
- Cook on low for 360-480 minutes or high for 180-240 minutes, until the potatoes are tender.
- Mash some of the potatoes in the soup for a creamy texture.
- Stir in the heavy cream or milk and shredded cheese, and mix until cheese is melted.
- Season with salt and pepper to taste.
- Top with bacon and garnish with chives or green onions before serving.
Notes
For chunkier texture, do not mash all the potatoes. Use Yukon gold potatoes for a buttery flavor.
