- 4 cups potatoes, peeled and diced
- 1 onion, chopped
- 3 cups beef broth
- 2 cups cream or milk
- 1 cup shredded cheese
- Salt and pepper to taste
- Optional: garlic, thyme, or other spices
Instructions
- In a skillet, brown the ground beef and onion until the beef is cooked through; drain excess fat.
- In the crockpot, combine the diced potatoes, beef broth, and the cooked beef and onion mixture.
- Cook on low for 6-8 hours or on high for 3-4 hours until the potatoes are tender.
- Stir in the cream or milk and shredded cheese until melted and smooth before serving.
- Season with salt and pepper to taste.
Notes
Serve with warm bread or salad. Leftovers can be stored in the refrigerator for up to 3-4 days or frozen for up to 3 months.
