Description

A hearty soup filled with tender potatoes and savory beef, perfect for chilly evenings.


Ingredients

  • 1 lb ground beef
  • 4 cups potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cups beef broth
  • 2 cups cream or milk
  • 1 cup shredded cheese
  • Salt and pepper to taste
  • Optional: garlic, thyme, or other spices

Instructions

  1. In a skillet, brown the ground beef and onion until the beef is cooked through; drain excess fat.
  2. In the crockpot, combine the diced potatoes, beef broth, and the cooked beef and onion mixture.
  3. Cook on low for 6-8 hours or on high for 3-4 hours until the potatoes are tender.
  4. Stir in the cream or milk and shredded cheese until melted and smooth before serving.
  5. Season with salt and pepper to taste.

Notes

Serve with warm bread or salad. Leftovers can be stored in the refrigerator for up to 3-4 days or frozen for up to 3 months.
