A warm, creamy bowl of chicken stew that’s simple to make and perfect for cozy dinner nights with family.
Ingredients

- 2 pounds of chicken breasts
- 4 cups of chicken broth
- 1 cup of heavy cream
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 tsp of dried thyme
- 1 tsp of dried rosemary
- Salt and pepper to taste
- 1 cup of frozen peas
- 2 tbsp of cornstarch (optional, for thickening)
Instructions
- Set your crockpot to the desired temperature (low or high).
- Combine chicken, chicken broth, heavy cream, carrots, potatoes, onion, garlic, thyme, rosemary, salt, and pepper in the crockpot.
- If you’re short on time, select the high setting and cook for about 3-4 hours, or choose the low setting for 6-8 hours.
- About 30 minutes before serving, stir in frozen peas. Mix in cornstarch if a thicker stew is desired.
- Once everything is cooked through and aromatic, serve warm and enjoy!
Notes
For added flavor, brown the chicken in a skillet before adding it to the crockpot. Substitute some broth with white wine for a richer flavor. Add white beans for extra heartiness!
