- 3–4 lbs beef chuck roast
- 1 cup cranberry sauce
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 cup beef broth
- 2 carrots, chopped
- 2 stalks celery, chopped
- Salt and pepper to taste
- 1 teaspoon thyme
- 1 teaspoon rosemary
Instructions
- Heat a large skillet over medium-high heat and sear the beef chuck roast on all sides until browned.
- Layer the sliced onion, minced garlic, chopped carrots, and celery in the crockpot.
- Transfer the seared roast on top of the vegetable mixture.
- In a bowl, mix together cranberry sauce, beef broth, thyme, rosemary, salt, and pepper, then pour over the roast.
- Cover the crockpot and cook on low for 8 hours or high for 4 hours, until the meat is tender.
- Serve warm with the cooked vegetables and sauce.
