- 1 (16-ounce) package potato gnocchi
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups fresh spinach
- 1 medium onion, diced

- 2 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Place the chicken breasts in the crockpot and add in the onion, garlic, carrots, celery, and chicken broth.
- Cook on low for 6-8 hours or until the chicken is fully cooked through.
- Remove the chicken from the crockpot, shred it into bite-sized pieces, and return it to the pot.
- Stir in the gnocchi, heavy cream, spinach, Italian seasoning, along with salt and pepper.
- Cook on high for an additional 30 minutes, or until the gnocchi are tender.
