Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 (16-ounce) package potato gnocchi
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in the crockpot and add in the onion, garlic, carrots, celery, and chicken broth.
  2. Cook on low for 6-8 hours or until the chicken is fully cooked through.
  3. Remove the chicken from the crockpot, shred it into bite-sized pieces, and return it to the pot.
  4. Stir in the gnocchi, heavy cream, spinach, Italian seasoning, along with salt and pepper.
  5. Cook on high for an additional 30 minutes, or until the gnocchi are tender.
