Ingredients

- 3–4 pounds beef roast
- 1 cup Catalina dressing
- 1 cup beef broth
- 1 onion, sliced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Optional: vegetables (carrots, potatoes) for serving
Instructions
- Place the beef roast in the slow cooker.
- In a bowl, mix together the Catalina dressing, beef broth, sliced onion, and minced garlic.
- Pour the mixture over the beef roast in the slow cooker.
- Season with salt and pepper.
- If using, add vegetables around the roast.
- Cover and cook on low for 8-10 hours or on high for 4-5 hours, until the beef is tender.
- Serve with the cooking juices.
Notes
Leftovers can be stored in an airtight container for up to 3-4 days, or frozen for up to three months. Reheat gently on the stove or microwave with a splash of beef broth.
