- 1 cup elbow macaroni
- 1 lb ground beef or turkey
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) chili beans, drained and rinsed
- 1 cup shredded sharp cheddar cheese
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 tsp chili powder
- 1 tsp cumin
- 2 cups low-sodium chicken broth
- Bell peppers (optional, diced)
Instructions
- Chop the onion, garlic, and optional bell peppers.
- In a skillet over medium heat, sauté the onions and garlic until translucent (3-4 minutes).
- Add the ground meat and cook until browned (5-7 minutes).
- Transfer the mixture to the crock pot and add in elbow macaroni, diced tomatoes, chili beans, chicken broth, spices, and bell peppers. Stir well.
- Set the crock pot to cook on low for 4-6 hours or on high for 2-3 hours, stirring occasionally.
- About 15 minutes before serving, stir in the shredded cheddar cheese until melted and creamy.
Notes
For a delightful touch, garnish with fresh cilantro or a dollop of sour cream. Pair with a green salad or cornbread for a complete meal.
