Description

Ingredients

  • 1 pound 90/10 ground beef
  • 1/2 medium onion, finely chopped
  • 2 tablespoons taco seasoning
  • 2 tablespoons tomato paste
  • 1/4 cup water or beef broth (as needed)
  • Salt to taste
  • 8 (6-inch) taco-sized flour tortillas
  • 2 to 3 cups mozzarella cheese, shredded
  • Avocado or vegetable oil for frying
  • Fresh cilantro, finely chopped (for garnish)

Instructions

  1. Heat 1 tablespoon of oil in a large skillet over medium heat. Toss in the chopped onions and sauté until softened, about 2-3 minutes.
  2. Add the ground beef into the skillet. Using a large spoon, break it up and cook until most of the beef is browned, about 4-5 minutes.
  3. Stir in the tomato paste and taco seasoning, mixing well. If the filling appears dry, add water or beef broth a little at a time. Continue to cook until the beef is fully cooked through and most of the liquid evaporates, about 3-4 minutes. Taste and season with salt if needed. Remove from heat and let it cool slightly.
  4. On a clean work surface, place a tortilla. On the top half, add about 1.5 to 2 tablespoons of mozzarella cheese. Spoon some of the beef filling on top, then add more cheese. Fold the bottom half of the tortilla over the filling and gently press to seal.
  5. Arrange the assembled tacos on a large baking sheet. Repeat with remaining tortillas and filling to make a total of 8 tacos.
  6. In a large skillet, heat 3-4 tablespoons of oil over medium heat. In batches, fry the tacos for about 1 minute per side until golden brown and crispy. Transfer them to a wire cooling rack over a baking sheet. If necessary, add more oil between batches to ensure they fry evenly.
  7. Garnish with fresh cilantro (optional) and serve immediately while hot and crispy, alongside your favorite dipping sauces.
