Description

A delicious and comforting creamy white chili made with tender rotisserie chicken and a blend of creamy textures and spices, perfect for busy weeknights.


Ingredients

  • 1 pound rotisserie chicken, shredded
  • 1 medium chopped onion
  • 1 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 2 cans (15-ounce) Great Northern beans, drained and rinsed
  • 14 1/2 ounces chicken broth
  • 2 cans diced green chiles (4-ounce cans)
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon pepper
  • 1/4 teaspoon cayenne pepper
  • 1 cup sour cream
  • 1/2 cup heavy whipping cream

Instructions

  1. In a large saucepan, heat olive oil over medium heat. Add the chopped onion and garlic powder, sauté until the onions turn translucent.
  2. Stir in the shredded rotisserie chicken, Great Northern beans, chicken broth, diced green chiles, and all the seasonings: salt, oregano, cumin, pepper, and cayenne pepper.
  3. Bring to a boil, then reduce the heat and simmer uncovered for about 30 minutes, stirring occasionally.
  4. Remove from heat and stir in the sour cream and heavy cream until well combined.
  5. Top with shredded cheese, tortilla chips, sliced green onions, lime wedges, or sliced jalapeños if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 3 months. Reheat gently on the stovetop over low heat.
