Description

A heartwarming creamy vegetable soup that offers warmth and comfort, perfect for chilly evenings and busy weeknights.


Ingredients

Scale
  • 2 cups mixed vegetables (carrots, celery, potatoes, etc.)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh herbs for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sauté until they turn translucent and fragrant (about 3-4 minutes).
  3. Toss in your mixed vegetables and cook for a few more minutes, just to begin softening them.
  4. Pour in the vegetable broth and bring the mixture to a boil.
  5. Lower the heat and simmer for 15-20 minutes, or until the vegetables are tender.
  6. Stir in the heavy cream and cheese, cooking until the cheese has melted completely.
  7. Season with salt and pepper to taste, then serve hot. Garnish with fresh herbs if desired.

Notes

For a lighter option, swap heavy cream for half-and-half or whole milk. You can also add cooked chicken or white beans for extra protein.
