- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 cup shredded cheese (cheddar or your choice)
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh herbs for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, sauté until they turn translucent and fragrant (about 3-4 minutes).
- Toss in your mixed vegetables and cook for a few more minutes, just to begin softening them.
- Pour in the vegetable broth and bring the mixture to a boil.
- Lower the heat and simmer for 15-20 minutes, or until the vegetables are tender.
- Stir in the heavy cream and cheese, cooking until the cheese has melted completely.
- Season with salt and pepper to taste, then serve hot. Garnish with fresh herbs if desired.
Notes
For a lighter option, swap heavy cream for half-and-half or whole milk. You can also add cooked chicken or white beans for extra protein.
