Description

A warm and comforting creamy vegetable soup, perfect for chilly evenings.


Ingredients

Scale
  • 2 cups mixed vegetables (carrots, celery, potatoes, or any combination)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh herbs for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic. Sauté until soft and fragrant, about 3-5 minutes.
  3. Introduce the mixed vegetables to the pot and cook for another few minutes until they start to soften.
  4. Pour in the vegetable broth and bring it to a boil. Once boiling, reduce the heat and let it simmer until the vegetables are tender, about 10-15 minutes.
  5. Carefully use an immersion blender to blend the soup until it is smooth.
  6. Stir in the heavy cream, and season to taste with salt and pepper.
  7. Garnish with fresh herbs if desired, and serve warm.

Notes

For a dairy-free option, substitute heavy cream with coconut cream. This soup can be frozen for up to three months.
