- 1 lb ground beef
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 packet taco seasoning
- 4 cups beef broth
- 1 cup heavy cream
- 1 cup diced tomatoes
- 1/2 cup chopped onion
- 1/2 cup diced bell pepper
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
- Add the chopped onions and diced bell peppers. Sauté until they are softened.
- Stir in the taco seasoning and allow it to cook for approximately 1 minute.
- Add the drained black beans, corn, diced tomatoes, and beef broth. Stir well and bring the mixture to a boil.
- Once boiling, reduce the heat and let it simmer for 15-20 minutes.
- Stir in the heavy cream and season with salt and pepper to taste.
- Serve hot, garnished with your favorite toppings.
Notes
For a vegetarian option, swap ground beef for ground turkey, chicken, or plant-based proteins. Can be seasoned with jalapeños for added heat.
