Description

A warm, comforting bowl of creamy taco soup filled with rich flavors and easy to prepare, perfect for family gatherings or busy weeknights.


Ingredients

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 cup diced tomatoes
  • 1/2 cup chopped onion
  • 1/2 cup diced bell pepper
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add the chopped onions and diced bell peppers. Sauté until they are softened.
  3. Stir in the taco seasoning and allow it to cook for approximately 1 minute.
  4. Add the drained black beans, corn, diced tomatoes, and beef broth. Stir well and bring the mixture to a boil.
  5. Once boiling, reduce the heat and let it simmer for 15-20 minutes.
  6. Stir in the heavy cream and season with salt and pepper to taste.
  7. Serve hot, garnished with your favorite toppings.

Notes

For a vegetarian option, swap ground beef for ground turkey, chicken, or plant-based proteins. Can be seasoned with jalapeños for added heat.
