Description

A warm and hearty creamy taco soup perfect for chilly evenings or family dinners, quick to prepare and packed with flavor.

Ingredients

Scale
  • 1 pound ground beef or turkey
  • 1 small onion, chopped
  • 2 cans (15 oz each) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 4 cups chicken or vegetable broth
  • 1 cup sour cream
  • 1 cup shredded cheese (optional)
  • Tortilla chips for serving

Instructions

  1. In a large pot over medium heat, brown the ground meat along with the chopped onion until fully cooked through. Drain any excess fat.
  2. Mix in the black beans, corn, diced tomatoes, taco seasoning, and broth. Bring the mixture to a rolling boil.
  3. Lower the heat and let the soup simmer for 10-15 minutes, stirring occasionally to prevent sticking.
  4. Remove from heat and gently stir in the sour cream until fully combined.
  5. Serve hot, garnished with shredded cheese, and enjoy with a side of crispy tortilla chips.

Notes

Customize variations like using ground chicken or low-sodium broth for healthier options.
