Ingredients

- 1 lb ground beef
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 packet taco seasoning
- 4 cups beef broth
- 1 cup heavy cream
- 1 cup diced tomatoes (optional)
- Salt and pepper to taste
- Toppings: shredded cheese, sour cream, cilantro (optional)
Instructions
- In a large pot, brown the ground beef over medium heat until it’s fully cooked. Drain any excess fat.
- Add in the black beans, corn, diced tomatoes (if using), beef broth, and taco seasoning. Bring to a simmer.
- Stir in the heavy cream and season with salt and pepper to your liking.
- Allow the soup to simmer for 10-15 minutes to meld the flavors.
- Serve hot, topped with shredded cheese, sour cream, and fresh cilantro if desired.
Notes
For a lighter option, use ground turkey or feel free to add jalapeños for a spicy kick.
