Description

A quick and comforting creamy taco soup perfect for chilly evenings and busy weeknights.


Ingredients

Scale
  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 cup diced tomatoes (optional)
  • Salt and pepper to taste
  • Toppings: shredded cheese, sour cream, cilantro (optional)

Instructions

  1. In a large pot, brown the ground beef over medium heat until it’s fully cooked. Drain any excess fat.
  2. Add in the black beans, corn, diced tomatoes (if using), beef broth, and taco seasoning. Bring to a simmer.
  3. Stir in the heavy cream and season with salt and pepper to your liking.
  4. Allow the soup to simmer for 10-15 minutes to meld the flavors.
  5. Serve hot, topped with shredded cheese, sour cream, and fresh cilantro if desired.

Notes

For a lighter option, use ground turkey or feel free to add jalapeños for a spicy kick.
