- 1 lb ground beef
- 1 can black beans (drained and rinsed)
- 1 cup corn (frozen or canned)
- 1 can diced tomatoes
- 1 onion (diced)
- 2 cloves garlic (minced)
- 1 packet taco seasoning
- 4 cups beef broth
- 1 cup heavy cream
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped cilantro
Instructions
- In a large pot, brown the ground beef over medium heat. Drain excess fat.
- Add the diced onion and minced garlic, cooking until softened, about 2-3 minutes.
- Stir in the black beans, corn, diced tomatoes, taco seasoning, and beef broth. Mix well.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.
- Stir in the heavy cream and season with salt and pepper to taste.
- Serve hot, garnished with your choice of optional toppings.
Notes
For more flavor, deglaze the pot with some beef broth after browning the beef. You can use pre-cooked rotisserie chicken for quicker cooking time.
