Description

A rich, creamy soup combining ground beef, vibrant veggies, and taco flavors, perfect for a quick weeknight dinner or special gatherings.


Ingredients

  • 1 lb ground beef
  • 1 can black beans (drained and rinsed)
  • 1 cup corn (frozen or canned)
  • 1 can diced tomatoes
  • 1 onion (diced)
  • 2 cloves garlic (minced)
  • 1 packet taco seasoning
  • 4 cups beef broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add the diced onion and minced garlic, cooking until softened, about 2-3 minutes.
  3. Stir in the black beans, corn, diced tomatoes, taco seasoning, and beef broth. Mix well.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.
  5. Stir in the heavy cream and season with salt and pepper to taste.
  6. Serve hot, garnished with your choice of optional toppings.

Notes

For more flavor, deglaze the pot with some beef broth after browning the beef. You can use pre-cooked rotisserie chicken for quicker cooking time.
