Description

A heartwarming bowl of creamy Parmesan Italian sausage ditalini soup that’s quick to prepare and bursting with flavor.


Ingredients

  • 1 pound Italian sausage
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup ditalini pasta
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, cook the Italian sausage over medium heat until beautifully browned. Remove from the pot and set aside.
  2. In the same pot, add the diced onion and sauté until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Pour in the chicken broth and bring to a rolling boil.
  4. Add the ditalini pasta and cook according to package instructions until al dente, about 7-8 minutes.
  5. Return the cooked sausage to the pot, then stir in the heavy cream and Parmesan cheese. Cook until heated through and cheese has melted.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.
