Description

Ingredients

  • 1 onion, diced

Instructions

  3. Toss in sliced mushrooms and cook until they’re browned and their moisture has evaporated.
  4. Pour in vegetable broth and bring the mixture to a gentle simmer.
  5. Stir in cottage cheese and blend until smooth, using an immersion blender as needed.
  6. Season with salt, pepper, and your choice of herbs to taste.
  7. Serve hot, garnished with a sprinkle of fresh parsley or thyme for added flair.
