Ingredients

  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Cook the gnocchi according to the package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute.
  3. Add fresh spinach and cook until wilted.
  4. Pour in heavy cream and bring to a gentle simmer. Stir in crumbled feta cheese, and season with salt and pepper.
  5. Gently fold in the cooked gnocchi, mixing until well combined.
  6. Serve hot, garnished with additional feta or Parmesan if desired.

Notes
