Description

A comforting dish of tender chicken in a rich garlic cream sauce served over fluffy rice and steamed broccoli.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper to taste
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 2 cups cooked rice
  • 1 cup broccoli florets, steamed
  • 1 tablespoon chopped fresh parsley for garnish

Instructions

  1. Heat oil in a large skillet over medium-high heat.
  2. Cook chicken pieces with salt and pepper for 6-8 minutes until fully cooked. Remove and set aside.
  3. Sauté minced garlic in the same skillet for about 1 minute until fragrant.
  4. Deglaze the pan with chicken broth, scraping up browned bits, and simmer for about 2-3 minutes.
  5. Make the sauce by stirring in heavy cream and Parmesan cheese, cooking until thickened for 3-4 minutes.
  6. Combine with Italian seasoning and return cooked chicken to the skillet, heating through for an additional 2-3 minutes.
  7. Serve by dividing rice into bowls, topping with chicken and sauce, and adding steamed broccoli.
  8. Garnish with chopped fresh parsley before serving.

Notes

For a lighter option, use vegetable broth or milk instead of heavy cream.
