- 1 pound boneless, skinless chicken breasts
- 2 cups chicken broth
- 1 cup heavy cream
- 1 bag (16 oz) gnocchi
- 2 cups fresh spinach
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, diced
- 3 cloves garlic, minced
- Salt and pepper to taste
- Italian seasoning to taste
Instructions
- Place the chicken breasts in the bottom of the crockpot.
- Layer the diced onion, carrots, celery, and garlic over the chicken.
- Pour in the chicken broth and heavy cream. Season with salt, pepper, and Italian seasoning.
- Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is thoroughly cooked.
- Remove the chicken, shred it, and return it to the slow cooker.
- Add the gnocchi and spinach, cooking on high for an additional 30 minutes until the gnocchi is tender.
- Stir well before serving, and enjoy!
Notes
Feel free to make substitutions based on what you have. Use half-and-half for a lighter option or swap spinach for kale.
