Description

A warm and comforting bowl of creamy chicken gnocchi soup, perfect for busy weeknights and lazy weekends.


Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 bag (16 oz) gnocchi
  • 2 cups fresh spinach
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Italian seasoning to taste

Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. Layer the diced onion, carrots, celery, and garlic over the chicken.
  3. Pour in the chicken broth and heavy cream. Season with salt, pepper, and Italian seasoning.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is thoroughly cooked.
  5. Remove the chicken, shred it, and return it to the slow cooker.
  6. Add the gnocchi and spinach, cooking on high for an additional 30 minutes until the gnocchi is tender.
  7. Stir well before serving, and enjoy!

Notes

Feel free to make substitutions based on what you have. Use half-and-half for a lighter option or swap spinach for kale.
