Description

A rich and flavorful pasta dish that combines creamy textures with the heat of chili oil, perfect for a quick weeknight dinner or to impress friends.


Ingredients

  • 1/2 lb rigatoni pasta (or penne)
  • 2.5 tbsp butter
  • 1 tbsp oil
  • 6 cloves garlic (sliced)
  • 2 tbsp tomato paste
  • 2.5 tbsp chili oil (just the sediments)
  • 1 cup heavy whipping cream (or heavy cream)
  • 1/4 cup pasta water
  • 1/2 tsp salt (adjust accordingly)
  • 1/2 tsp sugar
  • 1/2 tsp paprika (optional)
  • 2 tsp dried/fresh basil (optional)
  • Parmesan cheese for garnish

Instructions

  1. Cook the Pasta: Boil your pasta of choice in lightly salted water until it’s al dente. Remember to save some pasta water for later!
  2. Sauté the Garlic: In a large pan, melt 1 tablespoon of butter with 1 tablespoon of oil over medium heat. Add the sliced garlic and sauté for 2 to 3 minutes until fragrant and lightly golden.
  3. Add Tomato Paste: Stir in the tomato paste and cook for another minute, allowing the flavors to meld together.
  4. Incorporate Chili Oil: Add the chili oil sediments to the pan and stir well for about a minute.
  5. Mix in Cream: Pour in your heavy whipping cream and continue stirring for 1 to 2 minutes for everything to combine beautifully.
  6. Season and Simmer: To the mixture, add in salt, sugar, paprika, and basil. Keep the sauce cooking until it simmers, stirring occasionally.
  7. Combine with Pasta: Add 1/4 cup of the reserved pasta water, the cooked pasta, and the remaining butter. Stir everything until well-coated before turning off the heat.
  8. Serve: Plate your creamy chili oil pasta and top it with freshly grated Parmesan cheese. Enjoy while hot!

Notes

Feel free to swap in other types of pasta or adjust the amount of chili oil based on your heat preference. Use quality ingredients for best results.
