Description

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup onion, diced
  • 1 cup bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 cup corn kernels
  • 1 cup black beans, drained and rinsed
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 cup cheddar cheese, shredded
  • 4 oz cream cheese
  • Salt and pepper to taste
  • Tortilla strips for garnish
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large pot over medium heat, sauté the onion, bell pepper, and garlic until soft and translucent.
  2. Add in the shredded chicken, diced tomatoes, chicken broth, corn, black beans, cumin, chili powder, salt, and pepper. Stir to combine.
  3. Bring the mixture to a simmer and let it cook for 15-20 minutes, allowing the flavors to meld beautifully.
  4. Stir in the cream cheese and cheddar cheese until they melt and create a wonderfully creamy base.
  5. Serve hot, garnishing each bowl with tortilla strips and fresh cilantro if desired.
