Description

A creamy and hearty taco soup with ground beef, beans, and cheese—a quick and satisfying meal perfect for any night.


Ingredients

  • 1 lb ground beef
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 1 packet taco seasoning (or 2 tbsp homemade taco seasoning)
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 (15 oz) can black beans (drained and rinsed)
  • 1 (15 oz) can corn kernels (drained)
  • 2 cups beef broth
  • 1 cup heavy cream
  • 8 oz cream cheese (softened and cubed)
  • 1 ½ cups shredded cheddar cheese
  • Salt and pepper (to taste)
  • Optional toppings: sour cream, cilantro, sliced jalapeños, tortilla chips

Instructions

  1. In a large pot or Dutch oven, heat a splash of oil over medium heat.
  2. Add the ground beef, cooking until browned, about 5-7 minutes. Break it apart as it cooks.
  3. Drain any excess fat, then add the chopped onion. Sauté for 3-4 minutes until softened.
  4. Stir in the minced garlic and cook for another 30 seconds until fragrant.
  5. Mix in the taco seasoning, ensuring the beef and onion are well-coated.
  6. Add the can of diced tomatoes with green chilies, black beans, corn, and beef broth. Stir everything together.
  7. Bring the mixture to a boil, then reduce the heat and let it simmer for about 10-15 minutes.
  8. Stir in the heavy cream and cubed cream cheese, mixing until the cream cheese has melted into the soup.
  9. Add the shredded cheddar cheese, stirring until it’s melted and fully integrated.
  10. Season with salt and pepper to taste. Optional: add cayenne pepper or diced jalapeños for extra spice.
  11. Ladle the soup into bowls and top with your favorite garnishes.

Notes

Store leftovers in an airtight container for up to 4 days. Can also freeze in portions for later enjoyment.
