- 4 large potatoes, peeled and diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- 2 tablespoons Cajun seasoning
- Salt and pepper, to taste
- 2 tablespoons olive oil
- Chopped green onions for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onions and minced garlic. Sauté until softened and fragrant, about 3-4 minutes.
- Incorporate the diced potatoes and Cajun seasoning into the pot. Stir for a few minutes, allowing those flavors to meld together.
- Pour in the broth, bringing it to a gentle boil. Once boiling, reduce the heat and simmer until the potatoes are tender, roughly 15-20 minutes.
- Blend the soup until smooth using an immersion blender or in batches with a countertop blender.
- Return the blended soup to the pot and stir in the heavy cream. Season to taste with salt and pepper.
- Serve hot, garnished with chopped green onions for an extra touch of flavor and color.
Notes
