Ingredients

- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- Chopped green onions for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic and sauté until softened.
- Add the diced potatoes and broth to the pot. Bring everything to a boil.
- Reduce the heat and let the soup simmer until the potatoes are tender, about 15-20 minutes.
- Blend the soup to your desired consistency using a potato masher or an immersion blender.
- Stir in the heavy cream and Cajun seasoning. Season with salt and pepper to taste.
- Serve the soup hot, garnished with chopped green onions.
Notes
For a thicker soup, blend more of the potatoes. Add cooked sausage or chicken for extra protein if desired.
