Description

A comforting creamy soup with bold Cajun flavors and tender potatoes, perfect for chilly evenings.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped green onions for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic and sauté until softened.
  2. Add the diced potatoes and broth to the pot. Bring everything to a boil.
  3. Reduce the heat and let the soup simmer until the potatoes are tender, about 15-20 minutes.
  4. Blend the soup to your desired consistency using a potato masher or an immersion blender.
  5. Stir in the heavy cream and Cajun seasoning. Season with salt and pepper to taste.
  6. Serve the soup hot, garnished with chopped green onions.

Notes

For a thicker soup, blend more of the potatoes. Add cooked sausage or chicken for extra protein if desired.
