- 1 lb chicken breast, diced
- 1 cup onion, chopped
- 1 cup bell peppers, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion, bell peppers, and minced garlic. Sauté until they’re softened and fragrant, about 5 minutes.
- Add the diced chicken to the pot. Cook until browned on all sides.
- Stir in the Cajun seasoning and let it cook for about 1 minute to enhance the flavors.
- Pour in the chicken broth and bring the mixture to a boil.
- Reduce heat and let it simmer for 15 minutes, letting all those flavors meld together.
- Stir in the heavy cream, and season with salt and pepper to taste.
- Serve hot, garnished with chopped green onions.
Notes
For added depth of flavor, make sure to get a nice sear on the chicken before adding the broth. Adjust the Cajun seasoning to your taste, adding more or less for desired spiciness.
