Ingredients
Scale
- 2 cups broccoli florets
- 1 cup shredded cheddar cheese
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup milk (or a dairy-free alternative)

Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and garlic, sautéing until soft and aromatic.

- Bring to a boil, then reduce the heat and let it simmer until the broccoli is tender—about 10 minutes.
- Blend the soup using an immersion blender until smooth.
- Stir in the milk and shredded cheddar cheese until melted and well combined.
- If you want a thicker soup, mix cornstarch with a little water to create a slurry, then add it to the pot and stir.
- Season with salt and pepper to taste, and serve warm.
Notes
For a richer flavor, sauté the onions and garlic until golden. Substitute the cheese and milk for dairy-free options to make it vegan.
