- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 3 cups vegetable broth
- 1 cup milk
- 2 tablespoons butter
- Salt and pepper to taste
- Optional toppings: shredded cheese, chives, bacon bits
Instructions
- Begin by melting 2 tablespoons of butter in a large pot over medium heat.
- Add the chopped onion and sauté until it turns translucent, about 2-3 minutes.
- Stir in the diced potatoes, followed by the 3 cups of vegetable broth. Bring to a boil.
- Reduce heat and let it simmer until the potatoes are tender, approximately 15-20 minutes.
- Once the potatoes are soft, mash them slightly in the pot to create a creamy consistency.
- Stir in 1 cup of milk and season with salt and pepper. Heat through.
- Serve hot with your choice of toppings!
Notes
Using starchy potatoes like Russets or Yukon Gold will yield a creamier texture. For added depth, sauté some garlic with the onions.
