Description

A comforting and creamy potato soup that’s easy to make and perfect for chilly evenings.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cups vegetable broth
  • 1 cup milk
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, chives, bacon bits

Instructions

  1. Begin by melting 2 tablespoons of butter in a large pot over medium heat.
  2. Add the chopped onion and sauté until it turns translucent, about 2-3 minutes.
  3. Stir in the diced potatoes, followed by the 3 cups of vegetable broth. Bring to a boil.
  4. Reduce heat and let it simmer until the potatoes are tender, approximately 15-20 minutes.
  5. Once the potatoes are soft, mash them slightly in the pot to create a creamy consistency.
  6. Stir in 1 cup of milk and season with salt and pepper. Heat through.
  7. Serve hot with your choice of toppings!

Notes

Using starchy potatoes like Russets or Yukon Gold will yield a creamier texture. For added depth, sauté some garlic with the onions.
