Description

A creamy and colorful pasta salad combining cottage cheese, tuna, and fresh veggies, perfect for picnics or quick meals.


Ingredients

  • 8 oz pasta (penne or rotini)
  • 1 cup cottage cheese
  • 1 can tuna, drained
  • 1/2 cup diced celery
  • 1/2 cup diced red bell pepper
  • 1/4 cup diced onion
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions. Once cooked, drain and rinse it under cold water to cool it down.
  2. In a large bowl, combine the cottage cheese, drained tuna, diced celery, diced red bell pepper, diced onion, mayonnaise, and lemon juice. Mix everything together until well combined.
  3. Add the cooled pasta to the mixture and stir until you’ve evenly coated everything.
  4. Season with salt and pepper to taste, adjusting as you prefer.
  5. Refrigerate for at least 30 minutes before serving to allow the flavors to develop.
  6. Optionally, garnish with fresh herbs before serving to add a pop of color and freshness. Enjoy!
