- 1 cup low-fat cottage cheese
- 1/4 cup dark or semi-sweet chocolate chips, melted
- 1 tablespoon cocoa powder
- Optional: 1 teaspoon honey or maple syrup
- Optional: 1/2 teaspoon vanilla extract
Instructions
- Melt the chocolate chips in a microwave-safe bowl in 20-second intervals, stirring between each, until smooth.
- Combine the cottage cheese, melted chocolate, and cocoa powder in a high-speed blender or food processor. Blend on high for about 30 seconds. Scrape down the sides and blend again until completely smooth.
- Taste and add honey or maple syrup and vanilla extract if desired. Blend again to combine.
- Divide the mousse into small bowls or ramekins.
- Chill in the refrigerator for at least 30 minutes to set.
- Serve as is or top with fresh berries, a dusting of cocoa powder, or a swirl of whipped cream if desired.
Notes
Use high-quality chocolate for a deep, rich flavor. Choose low-fat cottage cheese to keep the dessert light.
