Ingredients

Scale
  • 1 cup low-fat cottage cheese
  • 1/4 cup dark or semi-sweet chocolate chips, melted
  • 1 tablespoon cocoa powder
  • Optional: 1 teaspoon honey or maple syrup
  • Optional: 1/2 teaspoon vanilla extract

Instructions

  1. Melt the chocolate chips in a microwave-safe bowl in 20-second intervals, stirring between each, until smooth.
  2. Combine the cottage cheese, melted chocolate, and cocoa powder in a high-speed blender or food processor. Blend on high for about 30 seconds. Scrape down the sides and blend again until completely smooth.
  3. Taste and add honey or maple syrup and vanilla extract if desired. Blend again to combine.
  4. Divide the mousse into small bowls or ramekins.
  5. Chill in the refrigerator for at least 30 minutes to set.
  6. Serve as is or top with fresh berries, a dusting of cocoa powder, or a swirl of whipped cream if desired.

Use high-quality chocolate for a deep, rich flavor. Choose low-fat cottage cheese to keep the dessert light.
