Description

A comforting one-dish wonder that’s high in protein and perfect for busy weeknights.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup cottage cheese
  • ¼ cup grated Parmesan cheese
  • ¼ cup chicken broth
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Olive oil spray, for greasing the dish
  • Optional garnish: chopped parsley or chives

Instructions

  1. Preheat the oven to 375°F (190°C) and spray an 8×8-inch baking dish with olive oil.
  2. Blend the cottage cheese, Parmesan cheese, chicken broth, garlic powder, onion powder, smoked paprika, salt, and pepper until smooth.
  3. Assemble the chicken breasts in the baking dish and pour the sauce over them, coating well.
  4. Bake uncovered for 30–35 minutes until the chicken reaches an internal temperature of 165°F (74°C). The sauce should be bubbling and golden.
  5. Rest for 5 minutes before serving, garnished with parsley or chives if desired.

Notes

Brine chicken for juiciness, and experiment with spices to suit your taste.
