- 4 boneless, skinless chicken breasts
- 1 cup cottage cheese
- ¼ cup grated Parmesan cheese
- ¼ cup chicken broth
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Olive oil spray, for greasing the dish
- Optional garnish: chopped parsley or chives
Instructions
- Preheat the oven to 375°F (190°C) and spray an 8×8-inch baking dish with olive oil.
- Blend the cottage cheese, Parmesan cheese, chicken broth, garlic powder, onion powder, smoked paprika, salt, and pepper until smooth.
- Assemble the chicken breasts in the baking dish and pour the sauce over them, coating well.
- Bake uncovered for 30–35 minutes until the chicken reaches an internal temperature of 165°F (74°C). The sauce should be bubbling and golden.
- Rest for 5 minutes before serving, garnished with parsley or chives if desired.
Notes
Brine chicken for juiciness, and experiment with spices to suit your taste.
