Description

A healthier twist on traditional brownies, these Cottage Cheese Brownies are rich, chocolatey, and packed with protein.


Ingredients

Scale
  • 1 cup cottage cheese
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. Blend cottage cheese until smooth and creamy.
  3. Mix in sugar, honey or maple syrup, and vanilla extract until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. In a separate bowl, whisk together cocoa powder, flour, and baking powder.
  6. Gradually mix the dry ingredients into the wet ingredients until just combined.
  7. If desired, fold in chocolate chips.
  8. Pour the batter into the greased pan and spread evenly.
  9. Bake for 25 to 30 minutes, checking for doneness with a toothpick.
  10. Allow to cool before slicing into squares.

Notes

For a rich dessert, serve warm with ice cream or whipped cream. Can also be stored in an airtight container for up to 3 days at room temperature or a week in the fridge.
