- 4 boneless, skinless chicken breasts
- 2 cups cornflakes, crushed
- 1 cup buttermilk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Cooking spray or olive oil
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a shallow bowl, combine the crushed cornflakes with garlic powder, onion powder, salt, and pepper.
- In a separate bowl, pour the buttermilk.
- Take each chicken breast, dip it into the buttermilk making sure it’s well coated, then press it into the cornflake mixture.
- Place the coated chicken breasts on the lined baking sheet.
- Lightly spray the tops with cooking spray or drizzle with olive oil to enhance crispiness.
- Bake for 25-30 minutes or until the chicken is cooked through and the coating is golden brown.
Notes
For extra flavor, marinate the chicken in buttermilk for a few hours. You can also use crushed potatoes or panko for coating.
