Description

A crispy, juicy chicken dish coated in crunchy cornflakes, perfect for weeknight dinners and family gatherings.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups cornflakes, crushed
  • 1 cup buttermilk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Cooking spray or olive oil

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a shallow bowl, combine the crushed cornflakes with garlic powder, onion powder, salt, and pepper.
  3. In a separate bowl, pour the buttermilk.
  4. Take each chicken breast, dip it into the buttermilk making sure it’s well coated, then press it into the cornflake mixture.
  5. Place the coated chicken breasts on the lined baking sheet.
  6. Lightly spray the tops with cooking spray or drizzle with olive oil to enhance crispiness.
  7. Bake for 25-30 minutes or until the chicken is cooked through and the coating is golden brown.

Notes

For extra flavor, marinate the chicken in buttermilk for a few hours. You can also use crushed potatoes or panko for coating.
