Ingredients

  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 3 cups vegetable broth
  • 2 cups potatoes, diced
  • 1 cup green beans, chopped
  • 1 cup corn (fresh or frozen)
  • 1 cup heavy cream or coconut milk
  • Salt and pepper to taste
  • Fresh herbs (like thyme and parsley) for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion, diced carrots, and diced celery. Sauté for about 5-7 minutes until softened.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Pour in the vegetable broth, then add the diced potatoes, chopped green beans, and corn. Bring everything to a boil.
  5. Once boiling, reduce the heat and let it simmer for about 20 minutes, or until the vegetables are tender.
  6. Stir in the heavy cream or coconut milk and season with salt and pepper to taste.
